Black Bean Tortilla Soup
This is my favorite soup; it has everything you need for a very healthy lunch. I eat this sometimes for dinner and have a plate of fruit afterward. The chicken takes on the appearance of beef due to the “Kitchen Bouquet” that enhances the flavor of this wonderful blend of five vegetables and juice.
Hearty Meatball Soup
I am basically lazy so I use packaged prepared meatballs that I buy at Costco. They are frozen but they are really tasty when blended with vegetables and spices. The spinach in this soup will fool you; it really adds depth and richness to this dish. This soup will stick to your ribs and if you add a small salad or sandwich with it, you have a filling and healthy meal.
Vegetable Beef Sauce
When this dish is cooking, it fills the kitchen with a rich smell of Italian cooking. This recipe reminds me of the type of sauce Italian mothers seem to keep on the stove all day every day. When poured over any type of pasta, it’s all you need for a very quick and delicious dinner. A little cheese, some crusty bread and maybe a nice glass of wine will finish this meal in a grand way.
Chicken Rice and Vegetables
This is a light and healthy meal that will please the palate and fill the stomach. When served with a half cup of cut asparagus or broccoli and a little melon, this dish is elegant enough to entertain with, as well as use as a daily standby. It contains five vegetables, rice and chicken: what could be healthier?
Betty’s Family Meatloaf
My wife Betty has been feeding me this meatloaf for over thirty years and I just keep eating it like it’s the first time. That’s because she knows about meatloaf and just how to season it. Now she doesn’t like to put any kind of sauce on hers but I like it with Prego “Italian Sauce with Fresh Mushrooms”.
Pasta Y Fagioli
Here we have beef and pasta with five vegetables and two types of beans. When you add the spices, sauce and juices, it’s hard to beat for another Italian style dinner. You can top it off with some melon or other fruit to make a meal your friends and family will really enjoy.
Green Chili Stew
I came up with the idea of this stew on a cold winter day here in northern Arizona and I just kept messing around with it until I got the taste just right. The diced green chiles are just the right flavor, not too many to make it hot but enough to bring out the Southwestern flavor I was looking for. I use pork steak in this dish, but beef also works well. When served with crusty bread or flour tortillas, you really get the Southwestern flavor.
Arizona Mountain Chili
Now here is a combination of bacon, pork sausage and ground beef that will get your attention. A few jalapeno peppers can go a long way, so I use them sparingly, but there is a blend of onions, garlic, tomatoes, and chili beans, that when adding the spices, makes this a fine meal for chili lovers. Served over pasta or rice will hit the spot. My favorite is over sliced, buttered cornbread. Now that’s chili!
Baby Back Ribs
We have a very simple way to prepare baby back pork ribs—start to finish in under one hour. The meat will almost be falling off the bones and with a little barbeque
sauce you will have the best finger lick’in good ribs in town. They are best when served right off the grill or right out of the oven, but you can heat them a little in the microwave and make a great leftover lunch meal the next day.
